I know this one might sound crazy but I am going to give it a shot I am sure it will be different. This one may take me awhile to actually try because I am rebelling mashed potatoes are one of my best friends and worst enemies and all next month I am going to attempt to replace my mashed potatoes with the following:

Since cauliflower is such a great vegetable to help shed excess weight. Simply steam an entire head of cauliflower until it is tender and mushy. Add some low-fat cream or dairy-free cream cheese, a small amount of butter, pepper and salt and whip!

I have not tried it yet. Holding off til this weekend. It sounds a bit different for me so I am not quite as enthusiastic about taking it on. However, you never know it actually may be alright. I will definitely let you know if it is.

Buffy (a lady I work with) does that cauliflower recipe and said it tastes just like mashed potatoes! My wife and I are going to try it! Lisa loves mashed potatoes!

We love the mashed cauliflower. My wife makes it at least once a week. I think her only variation is that she adds a small amount of parmesan cheese and stirs it in while they're hot so it melts in and makes them creamier. Also, some garlic stirred in also adds a lot.

That's cool! We'll have to try it! It sounds like a good healthy recipe for losing weight or just getting some extra vegetables! You guys are pretty sharp!

That sounds good.Parmesan is something I'd add to it and garlic would be great too.I wonder how it would taste with a little parsley.I add parsley to my mashed potatoes almost all the time.I'm just not sure how the califlower would taste.

Ok, I finally tried this out and it was not horrible but it was definitely different. I will most likely have it again but there is no way I am giving up my mashed p'taters for it
